Whey protein grades - WPC 35 to WPI 90, compared properly

The number is the protein percentage. Everything interesting about the choice is what came out along with the lactose - which is why formulators should read this as a lactose ladder, not a protein ladder.

The whey protein ladder

The number after "WPC" is the protein percentage on a dry basis and nothing else. WPC 35 and WPC 80 come from the same liquid whey; the difference is how much lactose and mineral was filtered away before drying. Each rung up the ladder costs membrane area, diafiltration water and dryer energy - which is why the price does not scale linearly with the protein number.

Typical values; exact figures are producer- and lot-dependent. Grades other than WPC 80 and WPI 90 are quoted on request - ask with your volume and delivery country.

Why WPC 80 became the default

WPC 80 dominates the market for a reason that is more economic than technical. It sits at the point where the protein content is high enough to carry a credible protein claim in a normal serving size, and the lactose is low enough not to cause problems, without paying for the last, most expensive filtration steps to isolate territory.

Go below it and formulation space starts to run out: at WPC 70 you need 1.43 g of powder per gram of protein instead of 1.25 g, and the extra 0.18 g has to displace something in a fixed-weight scoop. Go above it and each protein point costs disproportionately more. WPC 80 is where the curve is flattest.

Grade choice in one line each

  • WPC 35 - you want dairy protein function (binding, emulsification, browning) and the protein number is not on the label.
  • WPC 70/75 - you want most of WPC 80's function at a lower price and can carry the extra lactose.
  • WPC 80 - the default. Protein claim plus function, no filtration you did not need.
  • WPI 90 - lactose or clarity is a hard constraint, or the protein density arithmetic fails.

Lactose is the real ladder

Everyone reads the ladder as a protein ladder. Formulators should read it as a lactose ladder, because lactose is what actually breaks products.

  • Browning. Lactose plus available lysine gives Maillard reaction. Desirable in a bread crust, catastrophic in a white-coated bar that turns beige by month nine. Higher grade, less lactose, less browning.
  • Hygroscopicity. Lactose picks up moisture. A high-lactose grade in a bar softens or sweats; in a powder blend it drives caking.
  • Sweetness and flavour. Lactose contributes mild sweetness and dairy character. In a vanilla shake that is a bonus; in a savoury system it is a defect.
  • Crystallisation. Lactose crystallises over time in the right moisture conditions, giving gritty mouthfeel in bars and beverages.
  • Tolerance claims. The obvious one, and the one that generally forces the decision.

Working back from lactose rather than forward from protein changes the answer surprisingly often. A bar formulator fighting hardening and browning at WPC 80 may find that the real fix is WPI 90, even though the protein claim was already met.

Beyond whey: the wider protein set

WPC 80 is not always the right protein even when the protein number fits. Compare against:

Two warnings from that table. Collagen counts toward a protein declaration under EU labelling rules but contributes essentially nothing nutritionally - it lacks tryptophan entirely. Using it to hit a protein number is legal and indefensible. And soy protein isolate is a genuinely good protein with a PDCAAS around 1.0; the reason to avoid it is the allergen and the consumer perception, not the nutrition.

WPC grades - FAQ

It is the minimum protein content as a percentage on a dry matter basis. WPC 80 is at least 80% protein once the moisture is removed from the calculation. WPC 35 is at least 34-36%. It says nothing about quality, origin or processing - only the protein minimum.

It has more protein and less lactose. Whether that is better depends on your formulation. If you have the space in the serving and can carry the lactose, WPC 70 delivers most of the same functionality at a lower price and can be the smarter buy. If the protein claim is tight or lactose causes browning or caking, WPC 80 earns the difference.

Often yes, with two adjustments. You need roughly 6% more powder for the same protein, which has to come out of formulation space somewhere, and you are adding lactose, which affects browning, hygroscopicity and sweetness. In bakery and feed the swap is usually clean; in a bar or a high-protein shake it needs a trial.

Whey protein isolate at 90%+ protein, made by microfiltration or ion exchange. Above that you move into hydrolysates, which are not higher in protein but are pre-cleaved into peptides for faster absorption &mdash and taste noticeably bitter.

WPC 80, usually blended. It sits at the economic sweet spot - enough protein for the claim, low enough lactose to avoid problems, without paying for isolate filtration. Products marketed on an isolate claim are frequently blends with a WPC 80 base.
