Why Instant costs more (it is not the lecithin)
Lecithin at 0.3-0.5% inclusion is worth cents per kilogram. The €4.56 premium is the process.
Regular comes off the spray dryer and goes into a bag. Instant goes back: rewetted in a fluid bed so particles collide and agglomerate, sprayed with lecithin, re-dried, re-classified. That is a second energy-intensive pass, at lower throughput than the primary dryer, with yield loss to fines that have to be recycled. You are paying for dryer time, not for an emulsifier.
What you get for it are two physical changes working together. The agglomerates are larger and porous, so water wicks in by capillary action rather than sitting on a surface. The lecithin lowers surface tension at the powder-water interface, so a particle wets rather than floating. Without both, you get the familiar failure: a raft of dry powder on the surface and a clumped, unhydrated core.

Read it the other way as well. If you sell a consumer shaker product and you specified Regular to save €4.56/kg, the saving on a 5 t year is €22 800 - and a single wave of reviews complaining about clumping costs more than that in a month. The premium is cheap where it belongs and expensive where it does not. The mistake is treating it as a general cost-saving decision rather than a process decision.
If you are switching
Regular → Instant
- Add soy to the label. Non-negotiable under Regulation (EU) No 1169/2011.
- Recalibrate volumetric dosing. Lower bulk density means the same volume is less mass. Gravimetric dosing is unaffected.
- Check storage volume. The same tonnage takes more space.
- Ease off the mechanical handling. Aggressive pneumatic transfer breaks agglomerates and destroys the property you bought.
Instant → Regular
- Validate the dispersion step. If there is any hand-mixing anywhere in the chain, including in QC, test it before committing.
- Expect more dust. Manual dosing operations will notice. Review the local exhaust and PPE.
- You may be able to drop soy from the label, which can be worth more commercially than the €4.56/kg.
- Recalibrate volumetric dosing in the other direction.
Regular vs Instant - FAQ
Instant has been re-agglomerated in a fluid bed and treated with roughly 0.3-0.5% soy lecithin so it wets and disperses in cold water in under 30 seconds. Regular is standard spray-dried powder that needs agitation or shear. Protein, fat, lactose and amino acid profile are identical. The difference is physical format, the lecithin, and €4.56/kg.
Only if a person disperses the powder by hand in cold water. In that case the premium is trivial against the cost of consumer complaints. If a mixer, dough, extruder or wet process does the dispersing, the lecithin does nothing measurable and the premium is pure waste.
You can, and you will regret it. Regular clumps in a bottle, leaves a film and generates returns. On a 5 tonne year the saving is roughly €22 800 - less than one wave of bad reviews will cost you. This is the one place the premium clearly pays.
Marginally, in the sense that 0.3-0.5% of the mass is lecithin rather than protein. It is within the normal batch-to-batch variation of the grade and both meet the min. 80% specification on a dry basis. It is not a practical consideration.
Bag format follows the producer's fill line for each grade. It has no bearing on the price per kg, which is quoted per kilogram either way. Note that Instant is less dense, so a 20 kg bag of Instant occupies noticeably more volume than a 15 kg bag of Regular.
Only with fluid-bed agglomeration equipment. Simply blending lecithin powder into Regular does not reproduce the effect - the agglomerated porous structure does at least half of the work, and you cannot get that from dry mixing. If you have the equipment, we supply sunflower and soy lecithin as raw materials.
Regular. A bar is a wet, sheared, hydrated system in which the lecithin advantage does not exist. Use Regular and put the difference into managing bar hardening over shelf life, which is the real formulation problem in bars.
