What WPC 80 is
Milk contains roughly 3.3% protein, of which about 80% is casein and 20% is whey. When a cheesemaker adds rennet, the casein coagulates into curd and the whey proteins stay behind in the liquid - a pale green-yellow stream at about 0.6% protein, historically a disposal problem.
WPC 80 is what happens when you take that liquid seriously. Membrane filtration concentrates the protein from 0.6% to 80% on a dry basis, and the result is one of the highest-quality proteins available to the food industry: complete, rapidly digested, and rich in leucine.
The name is a specification, not a brand. "WPC" is whey protein concentrate; "80" is the protein minimum on a dry basis. Two lots meeting that definition can otherwise differ considerably in fat, lactose, heat treatment and functionality - which is why the specification sheet matters more than the name.
How it is made
- Whey collection. Sweet whey (pH 6.0-6.6) from rennet-coagulated hard cheese; acid whey from fresh cheese and casein manufacture. Sweet whey is the preferred input for WPC 80 - acid whey's higher mineral load makes downstream processing harder.
- Clarification and separation. Fine curd particles removed; a centrifugal separator strips residual fat. This step largely determines the final fat figure.
- Pasteurisation. A controlled heat step for safety. Overdo it and you denature the protein before you have even concentrated it - the reason heat class matters in the specification.
- Ultrafiltration. The core operation. Membranes with a molecular weight cut-off around 10 000 Da retain protein while water, lactose and minerals permeate through. Protein climbs; everything smaller leaves.
- Diafiltration. Water is added back to the retentate and filtered again, washing out more lactose and mineral. Repeating this is what gets you from WPC 35 to WPC 80. Each cycle costs water, membrane area and time - this is where the price of the grade comes from.
- Evaporation. The retentate is concentrated under vacuum, at low temperature to protect the protein.
- Spray drying. Atomised into a hot air stream. Droplets dry in seconds; evaporative cooling keeps the particle itself far cooler than the inlet air, which is how a protein survives a 180°C dryer.

The whole chain is physical. No solvents, no chemistry, no hydrolysis. That is why WPC 80 keeps its native protein fractions and why it behaves the way it does in a formulation.

The protein fractions
"Whey protein" is a family, not a molecule. What ultrafiltration preserves:
- Beta-lactoglobulin (~50-55%). The workhorse. High in BCAAs, adsorbs to interfaces - responsible for most of the emulsification and foaming. Denatures around 70°C; isoelectric point ~5.2, which is why acidic WPC beverages sediment.
- Alpha-lactalbumin (~20-25%). High in tryptophan and cysteine. More heat-stable than beta-lactoglobulin.
- Immunoglobulins (~10-15%). Heat-labile; survive membrane filtration, damaged by ion exchange.
- Bovine serum albumin (~5-8%). Rich in cysteine, a glutathione precursor.
- Lactoferrin, lactoperoxidase, glycomacropeptide and other minor fractions in trace amounts.
This composition is exactly what a concentrate keeps and an ion-exchange isolate partially strips. It is the strongest technical argument for concentrate that never appears on a supplement label.

Two caveats a serious formulator should hold onto. First, PDCAAS caps at 1.0, so it cannot distinguish between whey, egg and soy isolate - all three score 1.0. DIAAS, the successor method, does discriminate and puts dairy proteins clearly ahead of plant sources. Second, "fast" is not automatically "better". Fast digestion is an advantage post-exercise and a disadvantage in a satiety product, where casein's slow release is the point.

What it is used for
WPC 80 is bought for two entirely different reasons, and confusing them is the root of most formulation errors.
As a nutritional ingredient - sports nutrition, meal replacements, clinical nutrition, protein-enriched foods - where the amino acid profile is the point and the powder is essentially a delivery vehicle.
As a functional ingredient - bakery, processed meat, ice cream, sauces - where nobody cares about leucine and the protein is bought for water binding, emulsification, gelation, foaming or Maillard browning. Here, WPC 35 may do the same job for less, and a formulator who reflexively specifies WPC 80 is overpaying.
